Soba Koubou Tamae

Soba Koubou TamaeWaited one and a half years after reservation!
I have visited the Soba restaurant Tamae, where the reservation is full for the next one and a half years.Only one group (4 to 10 people) per day.I have enjoyed the charm of Soba.
The restaurant is in a quiet residential area 15 minutes’ walk away from JR Komagome station.
There is a relaxing space after you open the sliding door and take off your shoes as if you came back home. The kitchen is located where a regular house kitchen seems to be.
It feels as if I was invited to a house party!
The table set was fully prepared and a menu list with the name of the person that reserved is placed on the table.
The menu is an 11 cuisine course decided by the restaurant.The food we ate are the following.I will introduce them as they came.
The first was the Yaki Miso (Grilled Miso)
I have never experienced such taste!
The Yaki Miso which was served on a rice paddle used a lot of roasted sesame and was fragrant, crunchy, and rich and it was very nice.
Next is the Soba Salad.
It is a salad of sliced onions, Mizuna, deep fried Soba with Sesame and Miso flavored dressing.
The texture of the deep fried Soba was really good.
Ita Wakame and Aji Nori (Dried Seaweed).
This cute box like this is called the Hoiro and it dries the seaweed with the heat of the light. The seaweed which was crunchy was a great snack!
The fourth one that came was the Soba Crepe! I always wanted to try this.
The master told us that it is healthy because it does not use oil.
You eat this by putting egg, cucumber, radish, Mitsuba, and homemade Miso into the softly baked crepe.
The collaboration of the seasoning of the Miso, the fresh vegetables, and the Soba Crepe is like Japanese style crepe. It was soft and had a soft taste.
Next is a warm food, Haya Soba (Quick Soba).
It is a simple menu where sliced radish is surrounding the Sobagaki.
It is made by mixing sliced Soba and Soba dough and is a rare local cuisine of Nagano. The soft texture of the Soba and the crispy texture of the radish was a great match.
This is a cold cuisine, Kamo no Nanbanzuke (Duck Escabeche).
Fried duck with Soba powder and sweet and peppery vegetable sauce.
There is no strong aroma of duck and it was nice.
Soba Hatto.
Soba Hatto is a local cuisine eaten in Iwate, which is vegetables simmered in soy sauce flavor soup.
The origin of this menu is in the past, since Soba was so nice, Soba was prohibited for the peasants and this menu was made.
It had a slippery texture and there were a lot of vegetables and it was nice.
The eighth cuisine that came was the Soba no Kakiage (deep fried Soba).
The Kakiage with a cute appearance is crispy on the outside and soft inside.
It became really nice after adding the original Soba soup.
I was already 90% satisfied at this point.
This is Nasu no Soba Miso Gake (eggplant with Soba Miso).
There was also Shishitou along beside the eggplant.
The eggplant which is great with oil melted in the mouth. The collaboration of eggplant and the Soba Miso was great!
Finally today’s main has appeared, it is the Seiro Soba!
The Soba, which the master milled the Soba seeds right before, was shining.
The master recommended we try eating it with salt first so we tried.
The salt is a special salt from Hiroshima and when we ate the Soba with it, the aroma of the Soba became stronger.
When I finished, they asked us for a refill so I decided to have it.
The second serve was a different type of Soba so I was able to taste two different Soba.
At the end is the desert, Lemon Liquor Jelly.
Soba seeds are on top of the lemon jelly.
It was a refreshing climax to the dinner.
Full of Soba, hardly any meat, a dinner like vegetarian food and stylish food.
The Master was also really nice. I want to go again! Though I’ll have to wait another one and a half years.
The dinner of full of excitement from start to end! It is a restaurant with the value of waiting for a long time.
I thought it is very important to experience the food culture, Soba, which was eaten by Japanese people for a long time. I appreciate the master that provides such food and place.
